Finished the right way. Every time.

Our member farms grow non-GMO corn for Kentucky bourbon distilleries. The spent grain comes back after distilling, and the cattle finish on it for three months.

1The fields

It starts in the fields.

Our member farms are among the region's largest producers of non-GMO corn, grown specifically for distilling Kentucky's bourbons. That same care goes into the beef.

2The still

The distilleries take the corn.

Mashed, fermented and distilled into bourbon in Kentucky. What the stills leave behind is spent grain mash: wet, rich, and full of flavor most cattle never see.

3The mash

The mash is the feed.

The spent grain comes back to the farms and goes into the feed bunk. For the last three months before harvest it is what the cattle eat. Nothing wasted. A loop closed.

4The pasture

Raised on bluegrass and limestone water.

Pasture-raised and grass-fed for most of their lives, in the bluegrass around Shelbyville. The region's limestone-filtered water gives Kentucky's bourbons, and this beef, a depth of character.

Quality beyond the grade.

What the grade measures ends where the finish begins. Carcass traits tell part of the story. The three months that follow tell the rest.

The grade tells you what the animal was. The finish determines what ends up on your table. Three months on bourbon distillery grain produces the marbling, the flavor, and the eating quality that separate Bourbon Beef from commodity beef.

  • I

    Distinctive rich flavor

A depth of character that comes from the mash finish and the limestone water.

  • II

    Exceptional eating quality

Exceptional marbling that renders slowly, keeping every cut tender through the last bite.

  • III

    Premium characteristics

Raised with intention, finished in Kentucky, produced in small, accountable numbers.
